Traditional Nigerian Egusi Soup
Ingredients:
1 tsp Ground Achi ( From your local Caribbean or Ethnic Market)
1 1/2 Cups of Egusi ( From your local Caribbean or Ethnic Market)
Palm Tree Oil ( From your local Caribbean or Ethnic Market)
1 whole onion
1 pack of Beef Stew ( Any meat, or no meat at all will do)
2 Bushels of Mustard Greens
1 tsp of salt and pepper
1/2 tsp Maggi or Ground Crawfish
Recipe
Add 10-12 cups of water to your meat. Add your onion, salt and pepper and boil until the meat is done.
Remove the meat from the pot, and leave the water that you used in boiling the meat.
Add Egusi to a bowl, add palm tree oil, and 1/2 cup if water. Mix the ingredients until they are completely combined and smooth. There shouldn't be any lumps.
Add this Egusi mixture back into your pot, and pour it into the pot. Add 1 tsp of Achi. Let the ingredients boil for 5-6 minutes.
Add your meat back to the pot. Add Maggi or ground crawfish. Let it boil. Stir continuously to combine ingredients.
Add your cut mustard greens to your stew. Boil for another 5-6 minutes.
Stir, and serve.
